I used Stape’s template on Google Tag Manager, and activated Sever Side tracking, and then I started seeing repeat purchase and add-to-cart events only on Meta ads.

Usually this is because your events are also sent from another source, you can run a test mode in your dataset and check this. Maybe besides events in GTM you also have Facebook scripts in your code or some plugin/integration active that sends additional events.
