For now I’ve just provisioned a container, updated DNS and created a custom loader code snippet. The custom loader has not yet been placed on the website and the web container is not yet sending anything to the GTM serverside container and yet I have a few hundred requests already, does anyone know why?

If you provide us with the name or id of your container on Stape, we can look at it.
Also, on plans from Pro and above, you have access to logs where you can see what requests have been received.
@MichaelF also, if you tested your server setup i.e. launched sGTM preview - those hits would be calculated too.
